  • 1 cup prepared salsa mild or spicy depending on preference
  • 3-4 cups cooked chicken diced or shredded
  • 1 can black beans 15-ounce, drained and rinsed
  • 1 can kidney beans 15-ounce, drained and rinsed
  • 1 can whole kernel corn 15-ounce, drained
  • 2 teaspoons ground cumin
  • 1 packet fajita or taco seasoning mild or spicy depending on preference

Instructions
  1. In a large pot, heat butter or oil over medium heat, then sauté onion until softened for 5 minutes. Add minced garlic and cook for 1-2 minutes more.
  2. Stir in flour and cook for 1 minute. Pour in chicken broth and half-and-half, then add cream of chicken soup, salsa, chicken, beans, corn, cumin, and fajita seasoning.
  3. Simmer the soup over low heat for 15 minutes. Ladle into bowls, then garnish with tortilla chips or strips, grated cheese, and other desired toppings.
