  • 2/3 cup granulated sugar
  • 2 large eggs room temp, lightly beaten
  • 3 bananas very ripe, coarsely mashed with a fork
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour measured correctly
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips divided

Method
 

Instructions
  1. Preheat oven to 350˚F and line a 12-cup muffin tin with paper liners.
  2. In a mixing bowl, cream softened butter and sugar, then beat in the eggs.
  3. Stir in mashed bananas and vanilla extract until well blended.
  4. Whisk together flour, baking soda, and salt in a separate bowl, then gradually mix the dry ingredients into the wet mixture until just combined.
  5. Gently fold in 3/4 cup chocolate chips, then divide batter into the prepared muffin tin and sprinkle with remaining chocolate chips. Bake for 25-30 minutes until golden and a toothpick comes out clean; cool in the pan for 5 minutes before transferring to a rack.

Notes

For the best flavor, use very ripe bananas (with brown spots). Be careful not to overmix the batter to ensure light and fluffy muffins.
