Ingredients

  • 4–6 bone-in, skin-on chicken thighs
  • 1 lemon, juiced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sweet paprika
  • 1 tsp dried herbs (oregano, thyme, or Italian mix)
  • 1 tsp olive oil (optional, for extra crispness)

Equipment

  • Air fryer (basket or oven style)
  • Tongs
  • Large mixing bowl
  • meat thermometer

Method

  1. Pat chicken thighs very dry with paper towels to remove moisture. This helps crisp the skin.
  2. Preheat air fryer to 400°F (200°C) for 3–5 minutes.
  3. In a large bowl, squeeze juice from half a lemon over chicken. Add all seasonings and optional oil. Rub thoroughly to coat all sides.
  4. Place chicken skin-side down in air fryer basket in a single layer. Do not overcrowd.
  5. Air fry at 400°F for 12–15 minutes. Flip each thigh skin-side up.
  6. Continue air frying for another 10–15 minutes, until skin is golden and internal temp reaches 165°F (74°C).
  7. Remove chicken and let rest for 5 minutes before serving to allow juices to redistribute.

Notes

Pat the chicken very dry before seasoning for ultra crispy skin. You can use boneless thighs (reduce cook time). Experiment with Cajun seasoning, BBQ rub, or lemon zest for variations. Add a slice of bread under the basket to prevent air fryer smoking from drippings.
