- Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until softened and fragrant.
- Add chicken broth, uncooked pasta, shredded chicken, turmeric, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer, stirring occasionally, until pasta is al dente.
- Stir in heavy cream, peas, and diced carrots. Continue to simmer for a few more minutes until the vegetables are tender-crisp and the sauce has thickened slightly.
- Taste and adjust seasonings as needed. Serve immediately, garnished if desired.
Notes
For best results, do not overcook the pasta. Adjust the amount of broth or cream to achieve your desired sauce consistency.
