  • 450 grams ground lamb, or any ground meat
  • 1 grated onion food processed into a paste with 1 tsp water
  • 3 minced garlic cloves
  • 1 teaspoon salt
  • 1.5 teaspoons sweet paprika
  • 1 teaspoon oregano
  • 1/4 cup yogurt
  • 1 tablespoon olive oil

Method
 

Preparation and Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat with all other ingredients in a bowl and mix thoroughly.
  3. Divide the meat mixture into two equal portions.
  4. On a sheet of parchment paper, press and spread one half of the meat mixture into a thin, even rectangle. Use water or oil on your fingers to prevent sticking.
  5. Fold the parchment paper repeatedly over the meat from the long side until it forms a flat rope shape. Repeat this process for the second portion of meat.
  6. Place the parchment-wrapped meat rolls on a baking sheet and bake at 400°F (200°C) for about 40 minutes, until cooked through.
  7. Remove from the oven, allow to cool slightly, then unroll the parchment and break the meat apart.
  8. Squeeze fresh lemon juice over the meat and return it to the oven until it becomes lightly golden and slightly crisp.
  9. Serve the doner in a pita or bowl with lettuce, pickles, tomato, red onion, and garlic sauce. You can use store-bought garlic sauce or make your own by mixing yogurt, salt, garlic, and mayonnaise.
