Preparation and Cooking
- Preheat your oven to 400°F (200°C).
- Combine the ground meat with all other ingredients in a bowl and mix thoroughly.
- Divide the meat mixture into two equal portions.
- On a sheet of parchment paper, press and spread one half of the meat mixture into a thin, even rectangle. Use water or oil on your fingers to prevent sticking.
- Fold the parchment paper repeatedly over the meat from the long side until it forms a flat rope shape. Repeat this process for the second portion of meat.
- Place the parchment-wrapped meat rolls on a baking sheet and bake at 400°F (200°C) for about 40 minutes, until cooked through.
- Remove from the oven, allow to cool slightly, then unroll the parchment and break the meat apart.
- Squeeze fresh lemon juice over the meat and return it to the oven until it becomes lightly golden and slightly crisp.
- Serve the doner in a pita or bowl with lettuce, pickles, tomato, red onion, and garlic sauce. You can use store-bought garlic sauce or make your own by mixing yogurt, salt, garlic, and mayonnaise.
