- In a large pot, heat oil over medium heat, then add sausage and cook for 3-4 minutes until browned. Remove the sausage and set it aside.
- In the same pot, add onion, celery, and bell pepper, cooking until softened for 5-8 minutes, then add garlic and cook for 1 more minute.
- Stir in Cajun seasoning, salt, pepper, paprika, cayenne pepper, chicken broth, and potatoes. Reduce heat and simmer for 20-25 minutes until the potatoes are fork-tender.
- Return the sausage to the pot, then add heavy cream and shredded cheddar cheese. Simmer for an additional 5 minutes until heated through and the cheese is melted.
- Garnish the soup with chopped parsley and serve warm.
Notes
For extra heat, increase the amount of cayenne pepper. This soup is perfect for a comforting meal on a chilly day and pairs well with crusty bread.
