  • 1 cup Blueberries (fresh or frozen, do not thaw if frozen)

  • Maple syrup or honey for drizzling

Instructions
  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish or pie dish.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, milk, maple syrup (or honey), vanilla extract, cinnamon, and salt until smooth.
  3. Stir in the oats and baking powder until well combined.
  4. Gently fold in the blueberries, reserving a few for topping if desired.
  5. Pour the mixture into the prepared baking dish, spread evenly, and top with reserved blueberries. Bake for 30–35 minutes, or until the center is set and lightly golden.
  6. Allow the bake to cool for 5–10 minutes before slicing, then serve warm with your favorite toppings.

Notes

This breakfast bake is great for meal prep; simply store leftovers in the refrigerator for up to 3-4 days. You can customize it by adding nuts, seeds, or different berries.
