Ingredients
  

Cupcake Batter
  • 32 oz white cake mix 1 packet, regular size
  • 1 and ½ cups Lime Soda any lime/lemon - I used Mountain Dew
  • Food Coloring red and green

  • Muffin tin
  • Large bowl
  • Oven

Method
 

Preparation
  1. Preheat oven to 350F/180C. Line a 12-cup muffin tin with paper liners and lightly grease it.
  2. In a large bowl, beat the cake mix and soda for about 90 seconds. Divide the batter into three portions, coloring one red, one green, and leaving one white.
  3. Fill each muffin cup two-thirds full with a tablespoon of each colored batter. Bake for 18-20 minutes, or until a toothpick comes out clean.
  4. Cool the cupcakes in the pan for 10 minutes, then remove them and let cool completely before frosting.

Notes

For extra festive flair, decorate cooled cupcakes with your favorite Christmas-themed frosting and sprinkles.
