  • 1 sheet puff pastry thawed
  • 4 ounces brie cheese cut into 12 small pieces
  • 1/4 cup cranberry sauce or preserves
  • 1 tablespoon honey
  • fresh thyme sprigs for garnish (optional)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 12-cup mini muffin tin.
  2. Unroll the thawed puff pastry sheet on a lightly floured surface and cut it into 12 equal squares.
  3. Gently press each puff pastry square into the prepared muffin tin cups.
  4. Place a small piece of brie into each pastry cup, followed by a teaspoon of cranberry sauce and a drizzle of honey.
  5. Bake for 15-20 minutes, or until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  6. Carefully remove from the muffin tin and garnish with fresh thyme sprigs before serving warm.

Notes

These bites are best served warm. You can use either cranberry sauce or preserves. A sprinkle of fresh thyme adds a lovely aromatic touch.
