- In a small bowl, whisk together Dijon mustard, honey, cider vinegar, and lemon juice. Slowly drizzle in the olive oil while whisking continuously to emulsify. Season with salt and pepper to taste.
- Wash and dry the romaine and arugula thoroughly. Chop romaine into bite-sized pieces. Dice the apple and, if prepping ahead, toss with lemon juice to prevent browning.
- In a large bowl, combine romaine, arugula, diced apple, cranberries, candied almonds, and blue cheese. Toss gently.
- Right before serving, drizzle the salad with the prepared dressing. Toss gently until evenly coated. Serve immediately for best texture.
