Method
- Pat chicken breasts dry with paper towels to help the seasoning stick.
- In a small bowl, mix salt, onion powder, thyme, paprika, pepper, and garlic powder.
- Rub olive oil on all sides of the chicken, then coat evenly with the seasoning mix.
- Pour chicken broth into the bottom of the slow cooker. Place seasoned chicken breasts in a single layer.
- Cover and cook on LOW for 4–6 hours, or HIGH for 3–4 hours, until internal temperature reaches 165°F (74°C).
- Remove from slow cooker. Slice or shred and serve as desired.
Notes
You can substitute chicken thighs for a juicier result. Add vegetables like carrots or potatoes during the last 2 hours of cooking. For added flavor, toss shredded chicken in BBQ or buffalo sauce at the end.
