Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp ground paprika
  • 1/4 tsp ground black pepper
  • 1/4 tsp garlic powder

Method
 

  1. Pat chicken breasts dry with paper towels to help the seasoning stick.
  2. In a small bowl, mix salt, onion powder, thyme, paprika, pepper, and garlic powder.
  3. Rub olive oil on all sides of the chicken, then coat evenly with the seasoning mix.
  4. Pour chicken broth into the bottom of the slow cooker. Place seasoned chicken breasts in a single layer.
  5. Cover and cook on LOW for 4–6 hours, or HIGH for 3–4 hours, until internal temperature reaches 165°F (74°C).
  6. Remove from slow cooker. Slice or shred and serve as desired.

Notes

You can substitute chicken thighs for a juicier result. Add vegetables like carrots or potatoes during the last 2 hours of cooking. For added flavor, toss shredded chicken in BBQ or buffalo sauce at the end.
