Method
- Preheat your oven to 350°F / 180°C. Grease a 12-cup Bundt pan or two loaf pans (9×5 inch or 8.5×4.5 inch).
- In a medium bowl, whisk together sifted flour and baking powder. Set aside.
- In a large bowl, beat eggs and sugar with a mixer on high speed for 5 minutes until pale and fluffy.
- With mixer on low, gradually add oil. Then add orange juice, zest, and vanilla. Mix just until combined.
- Gently fold in dry ingredients using low speed or a spatula. Do not overmix.
- Pour batter into the pan(s). Bake for 50-60 mins (Bundt) or 40-50 mins (loaf) until a toothpick comes out clean.
- Let cake cool in the pan for 10-15 mins, then invert onto a wire rack and cool completely before slicing.
Notes
For best flavor, always use fresh orange juice and zest. You can substitute cake flour for a lighter crumb or add a pinch of cardamom for a spiced twist. To prevent dryness, avoid overmixing and monitor bake time carefully.
