Easy One-Pot Dumpling Soup

Ingredients
  

  • 1 tbsp toasted sesame oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh ginger, minced
  • 6 cups chicken stock
  • 3 tbsp low-sodium soy sauce
  • 4 green onions, thinly sliced
  • 2 large carrots, julienned or 1 cup shredded carrots
  • 1.5 pounds frozen dumplings (potstickers or mini potstickers)
  • 3 cups fresh spinach
  • Sea salt, to taste
  • 1 tsp sesame seeds, optional

Method
 

  1. Heat sesame oil in a large pot over medium heat. Add garlic and ginger, and sauté for about 3 minutes until fragrant.
  2. Add chicken stock, soy sauce, green onions, and carrots. Bring to a boil, reduce to a simmer for 5 minutes.
  3. Raise heat to high, add frozen dumplings, and boil until dumplings float and are heated through, about 4 minutes.
  4. Remove from heat, stir in spinach until just wilted from the residual heat (about 1 minute).
  5. Taste and adjust with sea salt. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

Use fresh ginger and garlic for best results. Avoid overcooking dumplings and spinach. Add chili oil for extra heat, or swap in other greens like bok choy. Store leftovers in the fridge and reheat gently.
