  • 2 lbs Chicken thighs, bone-in, skin-on about 4-6 thighs
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 2 tsp Dried Italian seasoning
  • 1 tsp Dried thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped for garnish, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or line with parchment paper.
  2. In a large mixing bowl, whisk together olive oil, minced garlic, Italian seasoning, dried thyme, salt, and black pepper.
  3. Add the chicken thighs to the bowl and toss them until each piece is thoroughly coated with the herb and garlic mixture.
  4. Arrange the seasoned chicken thighs in a single layer in the prepared baking dish, ensuring not to overcrowd.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the skin is golden and crispy.
  2. Once baked, remove the chicken from the oven and let it rest for 5 minutes before serving.
  3. Optionally, garnish with fresh chopped parsley before serving.

Notes

For extra crispy skin, pat the chicken thighs very dry with paper towels before seasoning.
