  • 1/3 cup maple syrup or honey
  • 1 3/4 cup oat flour

  • 1 tbsp matcha
  • 1 tsp spirulina optional

Method
 

Preparation Steps
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. In a bowl, combine oat flour, baking powder, salt, matcha, and the optional spirulina powder.
  3. In a separate bowl, mix together the almond milk, ground flax seeds, and vanilla extract.
  4. Melt the coconut oil, then mix it with maple syrup and add this mixture to the wet ingredients bowl.
  5. Slowly incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  6. Spoon the batter evenly into an oiled muffin pan.
  7. Bake for approximately 20 minutes, ensuring the muffins do not brown excessively.
  8. Remove the muffins from the oven, let them cool for 10 minutes, and then enjoy.

Notes

For a vibrant color and extra nutrients, consider adding spirulina powder, though it's entirely optional. If you don't have oat flour, you can easily make your own by grinding oats in a food processor. When preparing the muffin pan, you can either oil it with coconut oil or use muffin cups.
