Preparation Steps
- Preheat your oven to 375 degrees Fahrenheit.

- In a separate bowl, mix together the almond milk, ground flax seeds, and vanilla extract.
- Melt the coconut oil, then mix it with maple syrup and add this mixture to the wet ingredients bowl.
- Slowly incorporate the dry ingredients into the wet ingredients, mixing until just combined.
- Spoon the batter evenly into an oiled muffin pan.
- Bake for approximately 20 minutes, ensuring the muffins do not brown excessively.
- Remove the muffins from the oven, let them cool for 10 minutes, and then enjoy.
Notes
For a vibrant color and extra nutrients, consider adding spirulina powder, though it's entirely optional. If you don't have oat flour, you can easily make your own by grinding oats in a food processor. When preparing the muffin pan, you can either oil it with coconut oil or use muffin cups.
