  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 1 cup low-fat cottage cheese blended
  • 3 large eggs
  • 1 cup shredded cheddar or mozzarella
  • 1/4 cup grated Parmesan
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme or Italian seasoning
  • 1/2 tsp salt
  • Black pepper to taste
  • 2/3 cup cooked diced turkey or chicken Optional

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the blended cottage cheese and eggs until smooth.
  3. Stir in shredded cheddar or mozzarella, Parmesan, garlic powder, onion powder, thyme, salt, and black pepper until well combined.
  4. Gently fold in the broccoli and cauliflower florets, along with optional diced turkey or chicken.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 30–35 minutes, until golden and bubbly.
  7. Remove from oven and let cool for a few minutes before slicing and serving.

Notes

Allow the bake to cool slightly before slicing for easier serving. Feel free to add cooked diced turkey or chicken for extra protein.
