  • All-purpose flour for surface
  • 17.3 oz Puff pastry 1 package, thawed if frozen
  • Cooking spray
  • 2 tbsp Jam fig, apricot, or peach
  • 2 tbsp Shallots sliced
  • 10 oz Roasted red peppers 1 jar, cut into 24 (2" x 1/2") pieces
  • 8 oz Feta cut into 24 (1" x 1/2") cubes
  • 1 tbsp Fresh thyme leaves plus more for serving
  • Kosher salt
  • Freshly ground black pepper
  • Lemon zest of 1 lemon
  • 2 tbsp Chili oil

Method
 

Instructions
  1. Preheat oven to 425°F. Roll out puff pastry on a floured surface and cut into 24 squares.
  2. Grease a 24-cup mini muffin tin with cooking spray. Press each pastry square into the cups, allowing edges to protrude.
  3. Fill each square with jam, shallots, red peppers, a feta cube, and thyme; season with salt and pepper.
  4. Bake for about 20 minutes until pastry is golden and puffed, then cool for 5 minutes.
  5. Transfer to a platter and top with more thyme, lemon zest, and chili oil.

Notes

For best results, allow the bites to cool for 5 minutes before transferring to a platter. Garnish with additional fresh thyme, lemon zest, and a drizzle of chili oil for extra flavor.
