Preparation
- Preheat your oven to 350°F and prepare a standard 8.5-inch loaf pan by lining it with parchment paper or spraying.
- Peel the bananas and mash them in a large mixing bowl until almost liquefied, with some lumps remaining.
- Add the eggs to the mashed bananas and blend thoroughly with a fork or whisk.
- Stir in the brown sugar and self-rising flour, mixing just until combined.
- Pour the batter into the prepared pan. Optionally, slice the fifth banana lengthwise and place it on top before baking for 55 minutes, or until a toothpick comes out clean.
- Allow the banana bread to cool completely before slicing and serving.
Notes
*For self-rising flour alternative: combine 1 ½ cups all-purpose flour with 2 ¼ teaspoons baking powder and ¾ teaspoon salt. Ensure bananas are very ripe for the best flavor and sweetness.
