  • 2 large eggs
  • ¾ cup brown sugar tightly packed
  • 1 ½ cups self-rising flour *see notes for alternative

Method
 

Preparation
  1. Preheat your oven to 350°F and prepare a standard 8.5-inch loaf pan by lining it with parchment paper or spraying.
  2. Peel the bananas and mash them in a large mixing bowl until almost liquefied, with some lumps remaining.
  3. Add the eggs to the mashed bananas and blend thoroughly with a fork or whisk.
  4. Stir in the brown sugar and self-rising flour, mixing just until combined.
  5. Pour the batter into the prepared pan. Optionally, slice the fifth banana lengthwise and place it on top before baking for 55 minutes, or until a toothpick comes out clean.
  6. Allow the banana bread to cool completely before slicing and serving.

Notes

*For self-rising flour alternative: combine 1 ½ cups all-purpose flour with 2 ¼ teaspoons baking powder and ¾ teaspoon salt. Ensure bananas are very ripe for the best flavor and sweetness.
