Ingredients
  

  • 1 egg white
  • 2 tsp vanilla bean paste or pure vanilla extract
  • 4 cups mixed nuts (e.g., almonds, cashews, walnuts)
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat oven to 300°F (150°C) and lightly grease a baking sheet or line with parchment paper.
  2. In a large bowl, whisk egg white and vanilla until frothy.
  3. Add mixed nuts to the bowl and stir until evenly coated.
  4. In a separate bowl, mix sugar, salt, allspice, and cinnamon. Sprinkle over the coated nuts and stir well.
  5. Spread nuts in an even layer on the prepared baking sheet.
  6. Bake for 20 minutes, stirring halfway through for even baking.
  7. Transfer nuts to parchment or wax paper and cool completely for 30–45 minutes.
  8. Once cooled, break apart any clumps and serve or store.

Notes

Vanilla bean paste adds intense flavor and visual appeal, but vanilla extract works just as well. You can reduce sugar for a less sweet version, or experiment with nutmeg, ginger, or cayenne for added depth.
