Delicious Sugar Cookie Truffles (No-Bake!)

These delicious no-bake sugar cookie truffles are an easy and fun treat! Crushed sugar cookies are mixed with cream cheese and vanilla, rolled into balls, frozen, and then dipped in melted chocolate and decorated with sprinkles.

Ingredients
  

Truffle Base
  • 12-15 cookies sugar cookies I use the 5 ounce bag of Pepperidge Farms
  • 2-3 ounces cream cheese softened
  • 1/2 teaspoon vanilla extract
Coating & Decoration
  • 1 1/2 cups chocolate melting wafers
  • sprinkles Optional, for decorating

Equipment

  • Blender or food processor
  • Baking sheet
  • Parchment or freezer paper
  • Small cookie scoop or Tablespoon
  • Microwave bowl
  • Fork
  • Toothpick

Method
 

Preparation
  1. Blend sugar cookies in a blender or food processor until fine crumbs form.
Making the Truffles
  1. Add softened cream cheese and vanilla extract, then pulse until combined. Add an extra ounce of cream cheese if the mixture is too firm.
  2. Line a baking sheet, then scoop and roll the dough into balls, placing them on the sheet. Freeze for 20 minutes until firm.
Dipping & Finishing
  1. Melt chocolate in a microwave bowl for 1 minute, stir, and heat for another 15-30 seconds if necessary until smooth.
  2. Dip each truffle ball in melted chocolate using a fork, tap off excess, and return to the lined baking sheet, using a toothpick to assist.
  3. Immediately add sprinkles to each dipped truffle, then refrigerate until ready to serve.

Notes

If the cookie and cream cheese mixture is too firm, you can add an extra ounce of cream cheese. Remember to add sprinkles immediately after dipping each truffle for best adhesion.
