  • 1 tsp Dried rosemary

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the chopped potatoes, carrots, Brussels sprouts, and red onion.
  3. Drizzle the vegetables with olive oil, then sprinkle with rosemary, thyme, salt, and pepper, tossing until everything is evenly coated.
Roasting
  1. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  2. Add the cut sausage pieces evenly among the vegetables on the baking sheet.
  3. Roast for 20 minutes, then flip the sausage and stir the vegetables, continuing to roast for another 10-15 minutes or until the vegetables are tender and the sausage is cooked through and browned.
  4. Remove from oven and serve immediately.

Notes
