Preparation
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chopped potatoes, carrots, Brussels sprouts, and red onion.
- Drizzle the vegetables with olive oil, then sprinkle with rosemary, thyme, salt, and pepper, tossing until everything is evenly coated.
Roasting
- Spread the seasoned vegetables in a single layer on the prepared baking sheet.
- Add the cut sausage pieces evenly among the vegetables on the baking sheet.
- Roast for 20 minutes, then flip the sausage and stir the vegetables, continuing to roast for another 10-15 minutes or until the vegetables are tender and the sausage is cooked through and browned.
- Remove from oven and serve immediately.
