  • 1 cup honey 320g
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 4 cups quick oats 480g
  • 2 cups semi sweet chocolate chips 320g
  • 2 1/2 tbsp unsalted butter 35g

Method
 

Instructions
  1. Prepare a 9x13 inch pan by spraying or lining it with parchment paper, ensuring an overhang for easy removal.
  2. In a large saucepan, combine peanut butter, honey, and salt; gently heat over medium-low heat until melted, then continue heating for two more minutes, stirring occasionally.
  3. Remove from heat, stir in vanilla and oats, then pour the mixture into the prepared pan and gently spread it flat, avoiding firm pressing.
  4. Melt chocolate chips and butter in a microwave-safe bowl (or double boiler) in 30-second increments until smooth; pour over the oat mixture and spread evenly with a spatula.
  5. Refrigerate the pan for at least 2 hours to set. Once firm, cut into desired sizes; store leftovers at room temperature for up to a week, or in the fridge for up to 10 days.

These bars can be stored at room temperature for up to a week or in the fridge for up to 10 days. Storing at room temperature can make them gooier.
