- Prepare a 9x13 inch pan by spraying or lining it with parchment paper, ensuring an overhang for easy removal.
- In a large saucepan, combine peanut butter, honey, and salt; gently heat over medium-low heat until melted, then continue heating for two more minutes, stirring occasionally.
- Remove from heat, stir in vanilla and oats, then pour the mixture into the prepared pan and gently spread it flat, avoiding firm pressing.
- Melt chocolate chips and butter in a microwave-safe bowl (or double boiler) in 30-second increments until smooth; pour over the oat mixture and spread evenly with a spatula.
- Refrigerate the pan for at least 2 hours to set. Once firm, cut into desired sizes; store leftovers at room temperature for up to a week, or in the fridge for up to 10 days.
Notes
These bars can be stored at room temperature for up to a week or in the fridge for up to 10 days. Storing at room temperature can make them gooier.
