Preparation
- Preheat your oven to 325˚F and prepare a non-stick muffin tin by spraying it with cooking spray, or use silicone muffin cups without spraying.
Mixing
- In a blender, combine the eggs, cottage cheese, salt, and pepper; blend until the mixture is smooth and well combined.
Baking
- Distribute shredded cheese or other desired add-ins into each muffin cup, then equally fill each cup about 3/4 full with the egg mixture.
- Bake at 325˚F for 22-25 minutes until the tops and centers are set, or air fry at 300˚F for 12-14 minutes. Allow the egg bites to rest in the tin for 5 minutes before serving.
Notes
Customize your egg bites with various add-ins like cooked vegetables, bacon bits, or herbs. If using an air fryer, cover lightly with foil if they are browning too quickly.
