- Preheat your oven to 350 degrees F (175 C). Line a loaf pan with parchment paper and grease it well.
- In a large bowl, thoroughly mix the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract until the mixture is smooth.
- Add the almond flour, baking soda, and cinnamon to the wet ingredients. Mix until everything is fully combined; a slightly chunky texture from the cottage cheese is normal.
- Pour the prepared batter into the loaf pan. Bake in the preheated oven for approximately 50 minutes, covering the top with foil after about 30 minutes if it starts to brown too quickly.
- Remove the bread from the oven once it's cooked through; you can test for doneness by inserting a toothpick into the center, which should come out clean.
- Allow the banana bread to cool completely in the pan before slicing and serving to ensure it sets properly.
Notes
Depending on the brand of cottage cheese, your batter may appear chunky, which is perfectly normal and will not affect the final texture. If the top of the banana bread starts to brown too quickly during baking, loosely cover it with aluminum foil. To check for doneness, insert a toothpick into the center of the loaf; if it comes out clean, the bread is ready. Feel free to incorporate optional mix-ins such as walnuts, chocolate chips, or blueberries for added flavor and texture.
