Preparation
- Preheat oven to 350°F and grease an 8x8 inch square pan.
- Combine cottage cheese, egg, maple syrup, lemon juice, and vanilla extract in a food processor or blender; process until smooth.
- In a separate bowl, whisk together almond flour, baking powder, and salt.
- Gradually add the wet mixture to the dry ingredients and stir until just combined.
- Gently fold in the fresh blueberries, being careful not to crush them.
- Pour the batter into the prepared pan.
Baking
- Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before slicing and serving.
Notes
For best results, use fresh blueberries. You can also add a sprinkle of sliced almonds on top before baking for extra crunch.
