Crispy Air Fryer Zucchini

This crispy air fryer zucchini is golden, crunchy, and incredibly easy to make. Ready in under 10 minutes, it’s a healthier side dish made with minimal oil and simple ingredients.

Ingredients
  

  • 3 small to medium zucchini
  • 1 1/2 tbsp extra-virgin olive oil
  • 2 tbsp panko breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp white whole wheat flour or all-purpose flour
  • 1/2 tsp kosher salt
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper

Method
 

  1. Trim the ends off the zucchini. Cut lengthwise into quarters, then slice crosswise into 3/4-inch pieces.
  2. Place the zucchini in a large bowl and drizzle with olive oil. Toss to coat evenly.
  3. In a small bowl, mix panko, Parmesan, flour, salt, onion powder, and black pepper.
  4. Sprinkle the seasoning mixture over the zucchini and toss until evenly coated.
  5. Preheat the air fryer to 400°F (200°C).
  6. Arrange zucchini in a single layer in the air fryer basket, cooking in batches if needed.
  7. Air fry for 7–9 minutes, shaking the basket several times during cooking.
  8. Transfer cooked zucchini to a serving plate and repeat with remaining batches.
  9. Serve immediately while hot and crispy.

Notes

Use small to medium zucchini for best results, as large zucchini can be watery. For gluten-free, use gluten-free panko and flour. Nutritional yeast can replace Parmesan for a vegan option.
