- Trim the ends off the zucchini. Cut lengthwise into quarters, then slice crosswise into 3/4-inch pieces.
- Place the zucchini in a large bowl and drizzle with olive oil. Toss to coat evenly.
- In a small bowl, mix panko, Parmesan, flour, salt, onion powder, and black pepper.
- Sprinkle the seasoning mixture over the zucchini and toss until evenly coated.
- Preheat the air fryer to 400°F (200°C).
- Arrange zucchini in a single layer in the air fryer basket, cooking in batches if needed.
- Air fry for 7–9 minutes, shaking the basket several times during cooking.
- Transfer cooked zucchini to a serving plate and repeat with remaining batches.
- Serve immediately while hot and crispy.
Notes
Use small to medium zucchini for best results, as large zucchini can be watery. For gluten-free, use gluten-free panko and flour. Nutritional yeast can replace Parmesan for a vegan option.
