- Wash and optionally peel the russet potatoes. Slice into fries using a mandoline or sharp knife, about 1/4-inch thick.
- Place the cut potatoes in a large bowl and cover with cool water. Soak for at least 1 hour to remove excess starch.
- Drain the potatoes and pat completely dry using paper towels. This step is key for crispy fries.
- Preheat your air fryer to 375°F (190°C). Toss the dry fries in a bowl with olive oil, salt, and black pepper.
- Place the fries in a single layer in the air fryer basket. Avoid overcrowding. Cook in batches if needed.
- Air fry for 15–20 minutes, shaking the basket every 5–7 minutes until golden brown and crispy.
