Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • kosher salt to taste
  • ground black pepper to taste
  • paprika for garnish

Equipment

  • pot
  • skimmer
  • ice water bath
  • mixing bowl
  • fork
  • spoon
  • hand mixer

Method

  1. Bring water to a boil, then reduce heat before gently adding eggs. Increase heat to high and boil for 14 minutes.
  2. Prepare an ice water bath; after 14 minutes, transfer the boiled eggs into it to cool completely.
  3. Once cooled, peel the eggs, slice them lengthwise, and separate the yolks into a mixing bowl and whites onto a plate.
  4. Mash the yolks with a fork, then mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth, using a hand mixer for extra creaminess if desired.
  5. Spoon the deviled egg mixture back into the egg white halves and garnish with a sprinkle of paprika before serving.

Notes

For an extra smooth and fluffy filling, a hand mixer can be used. Ensure eggs are completely cooled before peeling for best results.
