Ingredients

  • 2 cups diced tart apples (about 2 medium apples)
  • 1 tablespoon sugar
  • 2 teaspoons lemon juice
  • 1 cup diced celery
  • 1 cup grapes, halved
  • 1/2 cup toasted walnuts or pecans, roughly chopped
  • 1/2 cup whipping cream, whipped to soft peaks
  • 1/4 cup mayonnaise
  • 1/2 teaspoon kosher salt

Equipment

  • Large mixing bowl
  • small mixing bowl
  • Whisk or electric mixer
  • Chef's knife
  • Cutting Board
  • Serving spoon

Method

  1. Wash and dry apples, celery, and grapes. Dice apples and celery, halve grapes. Toast nuts in a dry skillet if needed.
  2. Toss diced apples with lemon juice and sugar in a large mixing bowl. This prevents browning and adds flavor.
  3. Add diced celery, halved grapes, and chopped toasted walnuts to the apples. Do not stir yet.
  4. In a separate bowl, whip the cream to soft peaks. Gently fold in mayonnaise until just combined.
  5. Pour the whipped dressing over the salad and gently fold everything together until well coated.
  6. Season with kosher salt to taste. Cover and chill for at least 1 hour before serving.

Notes

Use tart, crisp apples like Honeycrisp or Granny Smith. For a lighter version, substitute Greek yogurt for mayonnaise or whipped cream. Add dried cranberries or raisins for sweetness. To make it nut-free, use sunflower seeds. Add diced cooked chicken or turkey for a protein boost.
