- Preheat the oven to 180C/350F and line an 8 x 8-inch pan with parchment paper.
- In a large bowl, whisk together the whipped cottage cheese, cocoa powder, almond butter, and sugar until smooth; fold in chocolate chips if desired.
- Transfer the brownie batter into the lined pan and top with extra chocolate chips.
- Bake the brownies for 25 minutes or until a toothpick comes out mostly clean.
- Let the brownies cool completely in the pan before slicing.
Notes
For the best fudgy texture and clean slices, ensure the brownies are completely cooled in the pan before attempting to cut them. Adding chocolate chips is optional but highly recommended for extra richness.
