Method
- Preheat a 5-quart air fryer to 380°F (193°C) for 5 minutes.
- Cut the chicken breasts into uniform 1-inch bite-sized pieces.
- Place chicken pieces into a mixing bowl and drizzle with olive oil.
- Add Cajun seasoning, sugar, salt, smoked paprika, red pepper flakes, poultry seasoning, thyme, and parsley to the bowl.
- Toss the chicken until all pieces are evenly coated with oil and spices.
- Lightly spray the air fryer basket with oil and arrange chicken in a single layer.
- Air fry for 7–11 minutes, shaking the basket or flipping pieces every few minutes.
- Check that the internal temperature reaches at least 165°F (74°C).
- Remove from air fryer and serve immediately.
Notes
Chicken thighs can be used instead of breasts for juicier bites—adjust cook time slightly. Avocado or grapeseed oil works well in place of olive oil. Sugar is optional and can be omitted. Fresh herbs may be substituted for dried using three times the amount.
